Instructions

Step 1
Place the egg, lemon juice, mustard, salt and pepper in the bottom of a hand-blender cup, hold the blender flush with the bottom of the cup and mix for 30 seconds
Step 2
With the blender going, slowly drizzle in the oil, always keeping the blender flush with the bottom of the cup. Once may emulsifies (about 2 minutes(, stop mixing, remove the blender, unplug it, and use a spatula to scrape any mayo left on the blender into the cup
Step 3
If you do not have a hand blender, whisk together all the ingredients except the oil in a medium bowl.
Step 4
Slowly drizzle in the oil while whisking constantly. If oil is added too quickly, the mixture will not emulsify.
Step 5
Will keep in an airtight container in the fridge for up to 5 days
