Instructions

Step 1
Pre heat the oven (180°c fan)
Step 2
Chop the tofu into thin, Deli-style, slices
Step 3
Use a pastry brush to paint both sides of the tofu in harissa pasta (for best results, do this in advance and leave to marinate for 24+ hours).
Step 4
Lay marinated tofu on a baking tray and cook for 20 minutes until crisp.
Step 5
While the tofu cooks, thinly slice the cabbage and set to one side.
Step 6
Finely chop the coriander.
Step 7
Stir coriander, garlic salt, black pepper, and lemon juice into Greek yoghurt.
Step 8
In another dish, mix together BBQ sauce and some more of the harissa paste. Toss the cabbage in this to lightly coat.
Step 9
Place your flatbreads onto the bottom of the oven for the last few minutes of the tofu's cooking time to warm.
Step 10
To construct the kebabs, spread the coriander yoghurt over the wraps. Layer cabbage and tofu, then roll to seal.
