Sausage and Kale Soup

Cooking the onions longer before adding in sausage will add to the flavour. I usually serve this with buns or garlic bread.

Instructions

Step 1
Over medium heat in a large pot, crumble the sausage, add in the diced onions. Cook down for 10 - 15 mins. Add in dried oregano, red pepper flakes, pepper, salt. Brown for another 5 minutes or until the sausage is thoroughly cooked. Add in garlic.

Step 2
Add in a tbsp of butter to the sausage and onion mixture depending on how much grease is left over, there should be enough to coat the sausage and onion mix. Let the butter melt in and heat up.

Add in both the flour and chicken bouillon, cook for 3-5 minutes. You should see mixture brown slightly. *should no longer smell of flour.

Step 4
Heat half & half, and homogenized milk in microwave or on stove top until warm. Then slowly whisk into the sausage, onion and flour mix, should thicken into a cream sauce. At this point slowly whisk in your water. *Be careful not to add in liquids to fast and break your rue. Taste soup base and add extra seasoning if needed. Add in cubed potatoes.

Simmer on low heat for 40-45 mins, stirring frequently to ensure the milk does not burn. At 30 minutes check potatoes, if close to tender add in kale pieces; simmer for another 10-15 minutes. Enjoy!
