LEMON & POPPY SEED YOGURT PANCAKES 🍋🥞
High protein pancakes, without any protein powder! I’m obsessed with everything lemon flavoured at the moment and safe to say these are an absolute HIT.
1 serving.
▫️ 100g 0% greek yogurt or Skyr
▫️ 1 egg
▫️ 1 tsp vanilla extract
▫️ 1 tsp honey
▫️ 30ml milk
▫️ 1 tbsp fresh lemon juice
▫️ Extra sweetener (optional) if you like things sweet!
▫️ 60g plain flour
▫️ 1/2 tsp baking powder
▫️ 1/4 tsp baking soda
▫️ 1 tsp poppy seeds
▫️ 1 tsp lemon zest
1. Add the yogurt, egg, vanilla, honey, milk and lemon juice to a small bowl and whisk to combine.
2. Sieve in the flour, baking powder and baking soda, followed by the poppy seeds and lemon zest. Mix well, but not too vigorously.
3. Heat a frying pan over a medium heat, evenly coat the pan with a splash of oil. Drop in 2 spoonfuls of batter, nudging it into round shapes if you need to and allowing some room for the pancakes to grow.
4. When bubbles start to appear, or after 1-2 minutes of cooking, flip them over using a spatula and cook for 1 minute more, until risen. Repeat with the rest of the batter.
5. Serve with sweetened greek yoghurt and a dusting of icing sugar.
