Basically, oil infused with fresh curry leaves on low temperature. To extract the flavor and benefits of curry leaves. You can choose any oil you like, I went with olive oil because that’s all I have right now, my kitchen is still not fully back to its full potential. I would recommend avocado oil for 2 reasons: 1. Avocado oil has a neutral taste, not as powerful as good olive oil. 2. Avocado oil would freeze when placed in the fridge like olive oil. Yes, after it cools down, you will keep the oil in the fridge to keep. I make small quantities to retain its freshness and to ensure it won’t go rancid. Another way to protect the oil is to use tinted glass jars. Curry leaves have antibacterial and antiviral properties, help manage blood glucose, fight against free radicals and many other benefits. It is best drizzled on dishes, and not to cook with.

Instructions

Step 1
In a saucepan, place the oil and curry leaves.
Step 2
Cook on low temperature. Use a thermometer to ensure that temperature stays between 90 and 100.
Step 3
Make sure the temperature doesn’t exceed 100 degrees.
Step 4
After 30 minutes, switch off the heat and allow it to cool down before you store in glass jars.
Step 5
Keep in the fridge for a longer shelf-life. It can last you 2 to 4 weeks.
