Step 1
Boil water, add salt and rice when water is boiling. Stir and cover tightly. Cook on low heat for 15 minutes

. Cook beef and chopped onion over medium heat until meat is no longer pink. Drain. Stir in tomatoes

CCP: Cook to a minimum internal temperature of 160 degrees F (71 degree C) for 15 seconds
Step 4
Add seasonings to prepared rice. Transfer mixture into baking dishes.
Step 5
Cover and bake at 350 F for 50-55 minutes. Sprinkle with cheddar cheese. Return to oven and bake for an addition 5-10 minutes, or until cheese is melted.
Step 6
CCP: Hold or serve hot food at or above 140 degree F.
