Instructions

Step 1
Boil a medium pot of water. Chop sweet potatoes into small cubes and add into boiling water with salt. While the potatoes are boilng, finely dice your bell pepper of choice and begin sauteeing. After ten minutes or once soft - Strain and toss in frying pan with olive oil and garlic until crispy. Set aside potatoes and fry two eggs to your preference.
Step 2
Place potato and pepper mixture into bowl and top with eggs. Top with chopped tomatoes, chopped green onions, and crumbled feta. Enjoy!
