Step 1
Slice sweet potato, dice onion. Pour olive oil in skillet. Add sliced sweet potatoes, tater tots, onions. Sprinkle with seasoning. Cook on medium-low heat until browned. Tater tots and sweet potatoes will break down, that's OK. This is hash! 😃 Crack eggs over top of hash and cover until cooked/steamed.

*Note: Sweet potatoes (I used white sweet potato) absorb oil and stick to pan. Keep your eye on it, scramble often. When you add the eggs, add a little water and tent with foil to essentially steam the eggs.
