Step 1
1. Press the tofu slightly and toss in some oil, turmeric, cayenne and salt. Put aside.
Step 2
2. Heat up some oil and fry the onion. Add garlic and ginger. Cook for two more minutes. Stir in all the spices, spinach, tofu and water and simmer for at least 5 minutes, or until sauce has thickened.
Step 3
3. Stir in the coconut milk and lemon juice. Heat it up and serve over rice.
