Instructions

Preparing the ingredients

Step 1
Soak and rehydrate shiitake mushrooms in water overnight or for a few hours.
Step 2
Peel raddish and cut it in half. Shred one half and cut the other half into medium-long chunks. Do not pour away the water that comes out from the raddish.
Step 3
Peel the carrot. Take the shiitake mushrooms out of the water but do not pour the water away, leave it aside for later. Dice the shiitake mushrooms and the carrot.
Step 4
Cut vegan bacon rashers into small pieces, resembling dices (depends on the texture of the vegan bacon)
Step 5
Sieve the rice flour and corn starch into a big bowl. Gradually put 1 1/4cup of water that was left aside. Whisk the mixture till flour is smooth and not clumped up.

Cooking the cake

Step 6
Heat up a large pan. Add 2tbsp of oil and fry bacon, shiitake mushroom and carrot in medium to high heat. Once the bacon is golden brown and crispy, put this aside for later.
Step 7
Leave the pan on medium heat, add some oil if the pan is dry, add all the turnip together with the turnip water. Be careful of the oil/water that could splash on you because of the heat. Turn down the heat if needed. Add sugar and mix well.
Step 8
Leave the turnip to cook for around 10-15min in medium to high heat until the turnip is cooked (should look transparent). Do not add water, water from the raddish will leave it to simmer.
Step 9
When the turnip is cooked, add salt and white pepper. Once the mixture looks less watery, turn off the heat, mix in the flour, the vegetables and bacon prepared earlier. Mix well.
Step 10
Prepare a cake form or any steamable containers, either with a layer of aluminum foil or brush a layer of oil on the inside.
Step 11
Pour the mixture into the cake form(s). Steam under high heat for 45mins. (Do not let the steamer run out of water, constantly check) Use a toothpick to check, if no flour is sticking to it, it is ready.
