Sweet & Sour Tofu

Good for anyone craving some classic sweet & sour. The fresh pineapple really makes it. I think this if from one of the Bosh recipe books.

Ingredients
4 servings
400gfirm tofu
cut into cubes
¼ cupcornflour
3 Tbspcooking oil
divided
1clove garlic
minced
1brown onion
cut into wedges
1red capsicum
small, cut into in bite-sized pieces
1green capsicum
small, cut into bite-sized pieces
1 cupfresh pineapple chunks
or canned
Sauce
½ cuprice malt syrup
¼ cuprice wine vinegar
2 Tbsplight soy sauce
2 Tbsptomato paste
2 tspcornflour
¼ cupwater
To Serve
Instructions
Step 1
Place the tofu and cornflour in a large bowl and toss well to coat.
Step 2
Heat 2 tbsp of the cooking oil in a large frying pan over medium heat. Cook the tofu all sides until golden crispy Transfer to a bowl and set aside.
Step 3
In the meantime, whisk together the sauce ingredients in a small bowl then set aside.
Step 4
Heat the remaining 1 tbsp cooking oil in the same frying pan over high heat. Add the garlic, onion, red capsicum and green capsicum and cook for 2-3 minutes. Add the pineapple and cook for an additional minute until all the vegetables are cooked.
Step 5
Add the tofu and the sauce, tossing well, then cook for an additional 1-2 minutes until sauce has thickened and coated all the ingredients.
Step 6
To serve, divide sweet and sour tofu among serving bowls with rice, then top with green onion and sesame seeds
