D'licious Chicken Wraps

Instructions

Step 1
Shred rotisserie chicken, discarding bones and skin.
Step 2
Heat 2 tablespoons oil in a large frying pan over medium heat.
Step 3
Add chicken and sauté to crisp up slightly, making sure not to overcook.
Step 4
Transfer to a bowl and set aside.
Step 5
Add remaining 3 tablespoons oil to the same pan and cook eggplant, mixing every so often, until cooked through, crispy, and golden. about 5 to 8 minutes.
Step 6
Turn off flame and season to taste with salt.
Step 7
Place avocados in a bowl, season to taste with salt, pepper and lime juice, if using, and mash with a fork.
Step 8
To assemble wraps: Pile some of the shredded chicken, shredded lettuce, and diced tomatoes on a wrap.
Step 9
Add a spoonful of seasoned avocado, a handful of French fries, some of the fried eggplant, and a drizzle of mayonnaise.
Step 10
Wrap tightly, tucking in the corners.
Step 11
Cut in half and serve immediately.
Step 12
Top with some quick pickled onions, if desired.
