Step 1
Line a loaf pan with cling wrap

Place egg yolks, sugar, vanilla seeds together in a heatproof bowl, over a saucepan of water boiling at low heat. Whisk until tripled in volume, thick, pale, and holds a ribbon (4-5 minutes).
Step 3
Remove from heat, continue to whisk until cooled (2-3 minutes).
Step 4
Whip the cream.
Step 5
Gently fold together cream and egg mixture, add any flavourings or toppings.
Step 6
Pour into pan and freeze for at least 6 hours.
