Instructions
Step 1
Preheat: Preheat your smoker to 220 degrees F.
Step 2
Prep the Chicken Thighs: Trim off any excess skin or thin parts. Flatten any excessively thick parts for even cooking.
Step 3
Season: Generously season the chicken on all sides with the dry rub. Make sure each piece is well-coated.
Step 4
Smoke: Place the chicken on the smoker. Close the lid and cook for 30 minutes. Flip the chicken and continue cooking for another 30 minutes.
Step 5
Grill: Preheat the grill to maximum temperature, around 500 degrees F, before the chicken is finished smoking. Grill the chicken for 2 minute on each side, flipping until the internal temperature reaches 165 degrees F (about 4-5 minutes total)
Step 6
Rest and Enjoy: Remove the chicken from the grill. Let it rest for 5-10 minutes before serving. Enjoy your delicious smoky and crispy chicken thighs!
