I found this recipe on The Kitchn, but adjusted it to fit my preferences. It was surprising, both sweet and savory, and a perfect accompaniment to roast vegetables and sausage.

Instructions

Step 1
Heat oven to 350 degrees.

Slice oranges into wedges. In a bowl, toss orange slices with olive oil.

Arrange oranges on an oven proof pan or tray. Sprinkle with salt and herbs.
Step 4
Roast until the pith is just starting to brown and the fruit is slightly swollen, about 20 - 30 minutes. Watch carefully after 20 minutes.
