Instructions
Step 1
Preheat the oven to 375F (190C) and line a baking sheet with parchment paper if not nonstick, then set aside.
Step 2
In a large mixing bowl or a stand mixer, cream the cold butter, cold shortening, granulated sugar and brown sugar together until creamy.
Step 3
Mix 4 teaspoons baking powder, 2 tablespoons oil, and water together to create your egg substitute. Add the vanilla and mix to combine.
Step 4
Sift the flour, corn starch, baking soda, and salt together and mix until incorporated. Add in the chocolate and gently fold.
Step 5
Using a ¼ cup measuring cup, scoop out 12 evenly sized cookie dough balls. Chill the cookies in the freezer for 15 minutes then bake in a preheated oven for 13-15 minutes or until they look slightly slightly underbaked and the edges are just starting to turn brown.
Step 6
As soon as your cookies are out of the oven, top with a few extra chocolate chips or chunks and let the cookies rest on the baking sheet until cool. This allows them to complete baking and have a soft, chewy center.
