OREGANO IS VERY ¡MPORTANT IN THIS DISH. ¡ ALWAYS GET MY OREGANO DRIED ON THE STEM FROM THE MARKET AND CRUMBLE ¡T MYSELF. THE FLAVOUR IS SO MUCH BETTER THAN THE DRIED OREGANO YOU GET IN THE LITTLE SPICE SHAKERS.

Ingredients

1tomato
large, cut into 1 cm pieces

1Lebanese cucumber
small, cut into 1 cm pieces

0.5red capsicum
deseeded and cut into 1 cm pieces

40gfeta

85gcan tuna in chilli oil
drained and oil reserved

1 teaspoonextra-virgin olive oil
good-quality

0.5juice of lemon

1 teaspoondried oregano

sea salt

40gwalnuts
roughly chopped

1egg
soft-boiled, halved

freshly ground black pepper
Instructions
Step 1
In a large mixing bowl, combine the tomato, cucumber and capsicum. Crumble in the feta and flake the tuna over the top.
Step 2
Mix the drained tuna oil with the olive oil, lemon juice, oregano and salt. Pour the dressing over the salad and toss to combine. Transfer to a plate, top with the walnuts, egg and some freshly ground pepper and eat up.
