Instructions

Step 1
* Add the cucumbers and red onion to a large mixing bowl and drizzle with olive oil and lemon juice. Toss to coat. Add the mint, dill, kosher salt, and freshly ground black pepper and toss again. Top with crumbled chunks of feta cheese. This salad is best served chilled the day it's made but will last in the fridge for 2-3 days.
Step 2
* I have also used 2 servings of cucumbers and 1 serving of cherry tomatoes and I cut back on the amount of mint and dill. I make ahead of time and allow the sale to marinate for at least 8 hours as well
