2 x 15 ozcan chickpeas
drained and rinsed
1cucumber
medium, chopped
1bell pepper
chopped
0.5red onion
thinly sliced
½ ckalamata olives
chopped
½ ccrumbled feta
kosher salt
freshly ground black pepper
½ cextra-virgin olive oil
¼ cwhite wine vinegar
1 Tbsplemon juice
1 Tbspparsley
freshly chopped
¼ tspred pepper flakes

Instructions
Step 1
Make salad: In a large bowl, toss together chickpeas, cucumber, bell pepper, red onion, olives, and feta. Season with salt and pepper.
Step 2
Make vinaigrette: In a jar fitted with a lid, combine olive oil, vinegar, lemon juice, parsley, and red pepper flakes. Close the jar and shake until emulsified, then season with salt and pepper.
Step 3
Dress salad with vinaigrette just before serving.
