Instructions
Step 1
Peel and dice potatoes into your desired size. Set aside.
Step 2
Mince onions and garlic, set aside separately.
Step 3
Slice bacon into small pieces.
Step 4
Turn Instapot on ‘Saute’ and add bacon. Cook until fat is rendered and bacon is crispy. Remove and set bacon aside.
Step 5
Add onions and butter into the bacon fat. Cook until onions are translucent. Deglaze the bottom of any browned bacon.
Step 6
Add garlic and cook until fragrant. Sprinkle in flour and mix into onions and butter.
Step 7
Quickly add in the chicken broth and deglaze the bottom of the pan to ensure no flour is browned on the bottom.
Step 8
Carefully add potatoes (so they don’t splash), milk, heavy cream, salt, pepper, and chili powder.
Step 9
Add the lid and set the pressure cooker for 8 minutes. Use a natural release.
Step 10
After natural release, remove the lid. Using a potato masher or an immersion blender mash a quarter to a third of the soup to thicken. Stir.
Step 11
Serve with shredded cheddar cheese and remaining bacon.
