Instructions
Step 1
Heat oil in a frying pan over medium heat.
Step 2
Add mushrooms and garlic to the pan, cooking for a few minutes.
Step 3
Add leek to the pan. Cook another few minutes until the mushrooms have softened.
Step 4
Add tomatoes and spinach to the pan, followed by the eggs, seasoning with the salt and pepper. Cook for a further few minutes, slowly stirring, until the eggs have scrambled.
Step 5
Serve topped with some chilli paste, if desired.
