Step 1
Preheat your oven to 170 degrees Celsius or 350 F.
Step 2
In a large bowl, add your sugar and 2 overripe bananas. Mix well until incorporated. Should look a little bit gooey.
Step 3
Add your vegetable oil, lemon zest and your egg. Mix it in.
Step 4
Slowly add in your flour bit by bit through a sift.
Step 5
Add your salt and baking powder into the dough.
Step 6
Scoop out dough into muffin tins until it’s 1/4 full.
Step 7
Cut small slides of the over ripe banana and place it on top and sprinkle with some lemon zest for decor.
Step 8
Bake for 30 minutes or until your toothpick comes out dry
