Prepare a rub with equal parts:

1 Tbspbrown sugar

1 TbspKosher Salt

1 Tbsppaprika

1 Tbspcumin

1 Tbspgarlic powder

onion powder

1 Tbspchili powder

1 Tbsppepper
Prepare roasting Pan
Paste
Instructions
Step 1
Preheat oven (or grill) to 450 degrees

Step 2
Trim fat from picnic
Step 3
prepare rub and coat picnic with. Make additional quantity for a larger cut of meat
Step 4
Place meat in a roasting pan and add the apple juice to the pan
Step 5
Cover pan tightly with foil
Step 6
Roast meat for 30 minutes
Step 7
Reduce heat to 250 degrees (or move to smoker set for 250 degrees) and roast for 2.5 hours (appx. 35 minutes per pound)
Step 8
Remove from heat and brush pork with a paste made of brown sugar and cream sherry
Step 9
Return to heat for another 15 minutes
Step 10
Remove from heat, let stand for about 15 minutes and shred and serve.
