Tomato Grilled Cheese
This Tomato Grilled Cheese Sandwich is the perfect Summer sandwich. Fresh tomatoes and basil are tucked into the sandwich to make the ultimate flavour combination!

Instructions
Step 1
1. Preheat your skillet preferably cast-iron on low heat.
Step 2
2. Thinly slice the tomatoes and lay them on a paper towel and let sit to release any water.

3. Lay out 2 slices of bread on a work surface. Thinly and evenly spread 2 tablespoons of mayonnaise on one side of each bread. Sprinkle with garlic powder and flip (this will be the outside of the sandwich).
Step 4
4. Place 2 slices of mozzarella cheese, then 2 slices of provolone cheese, followed by the tomato slices. Season the tomatoes with salt and pepper. Add the basil then 2 more slices of mozzarella and provolone.
Step 5
5. Top with the remaining slice of bread mayonnaise side up.
Step 6
6. Place mayonnaise side down in the skillet. Grill until golden, about 4-5 minutes. Flip and grill the other side until golden and crispy. And Enjoy!
