Preheat the Oven: Start by preheating your oven to 325°F (163°C). Grease a 9-inch springform pan and line the bottom with parchment paper.

Prepare the Crust: In a medium bowl, combine almond flour, melted coconut oil, and honey (or maple syrup). Mix until the ingredients are fully incorporated and the mixture resembles wet sand. Press the mixture into the bottom of the prepared springform pan, creating an even layer. Bake the crust for 10 minutes, then let it cool while you prepare the filling.

Make the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Gradually add sugar, continuing to mix until well combined. Beat in the eggs one at a time, making sure each is fully incorporated before adding the next. Stir in the vanilla extract.

Divide and Flavor the Batter: Divide the cheesecake batter evenly into two bowls. In one bowl, add the pitaya puree and lemon juice, mixing until fully combined. In the other bowl, add the black goji berry powder (or chopped rehydrated berries) and cornstarch, stirring until smooth.
