Instructions

Grilled vegetables

Step 1
Dice the eggplant and zucchini.
Step 2
Heat the olive oil in a pan. Turn the heat to medium and add the eggplant. Sauté for approx. 5 mins. until the eggplant is lightly golden.
Step 3
Add the zucchinis and spices and sauté for another 3-5 mins.
Step 4
Remove the vegetables from the pan.

Gnocchi salad

Step 5
Heat 1 tbsp of olive oil again. Set the heat to medium-high. Add the gnocchi and fry, tossing, for approx. 5 mins. until crispy and golden brown.
Step 6
Halve the tomatoes and finely chop the basil.
Step 7
Grate the parmesan and garlic.
Step 8
Place all the ingredients, including the grilled vegetables, in a bowl and mix well. Then enjoy!
