Chicken Burger (Airfried)

Instructions

Prepping the chicken

Step 1
Take your chicken breast out of the fridge an hour before cooking. Butterly the chicken breast , then flatten it out by hitting it with a rolling pin, meat tenderiser, or just the bottom of a frying pan. You are aiming for about a 1cm thickness. Once flattened, cut the breast in half vertically
Step 2
Sprinkle some salt and leave to sit uncovered at room temp for an hour

Prepping the rest of your ingrediants

Step 3
Put of the the seasoning ingrediants into a pot and mix together thoroughly
Step 4
Crush the cornflakes until fairly fine, looking for the consistency of thick breadcrumbs
Step 5
Cut the lettuce into smaller chunks (about thje length of your finger tip). Then put into a bowl with the mayo and cayenne pepper (if using), a couple of drops of white vinegar, and a bit of black pepper. Give a good mix and let sit in the bowl until plating

Breading the chicken

Step 6
Pour the flour into a a bowl or on to a plate. Then crack the egg in/on to another bowl/plate. Then the same with the cornfalkes in/on a bowl/plate.
Step 7
Pour half the seasoning mix into the flour and the other half into the cornflakes and then beat the egg completely
Step 8
Dry the chickens surface as much as possible with some paper towls, this helps the flour stick. Toss the chicken in the flour ensuring that it is fully coated. Shake off any excess
Step 9
Put the floured chicken into the egg and repeat the previous step with egg, ensuring again for full coverage with no dry spots and letting any excess drip off before moving to the cornflakes
Step 10
Toss the chicken in the corn flakes and rreally press them in. It does not need to be completely incased but you want about about a 95-98% coverage. Then place the breaded chicken on some paper towel

Cooking the burger

Step 11
Pre heat your airfryer for 5 minutes at 200 degrees
Step 12
Cut your burger buns in half, spread the butter on them and toast them cut side down until well toasted
Step 13
Once the airfryer is preheated place the chicken breast in and air fryer for 4 minutes at 200 degrees. Flip and then air fry for another 4 minutes
Step 14
After flipping your chicken, place your bottom bun down and spread your lettuce mixture on. Don't do this to early
Step 15
Once the chicken is cooked. Remove the chicken and place on top of your lettuced bun. Top with a slice of cheese and the top bun
Step 16
Optionally but recommend. Wrap in some parchement paper or foil and let sit for 5 minutes. This steams the ingrediants together and lets the flavours mingle
