Spinach Artichoke Quinoa Bowl
Found this recipe originally on Tiktok, but I can't find the original recipe, so I apologize to the creator! Just adding this to our personal recipe collection

Instructions
Step 1
Crispy Chickpeas: preheat oven to 425 F, add chickpeas, olive oil, and grated parmesan and toss to coat. Spread on a parchment/silicone baking sheet and bake for 20-30 minutes until crispy
Step 2
For quinoa: add quinoa and 2 cups broth to a pot, bring to a boil then cover and reduce heat to simmer and cook 10-15 minutes until liquid is gone
Step 3
Heat up olive oil in large pan on medium heat. Add onions and cook until soft. Add spinach and 1 tbsp broth until spinach wilts. Add garlic and artichoke hearts and mix.
Step 4
Turn heat to low and add greek yogurt, parmesan cheese, garlic/onion powder, salt and pepper and mix. Quinoa and mix again. Top with crispy chickpeas, hemp hearts, and parmesan and side with naan bread. enjoy.
