Instructions
Step 1
Saute mushrooms until they release their juice. Pat dry & set aside.
Step 2
Saute onion in mushroom juice and a bit of oil or butter until soft.
Step 3
Whisk eggs with desired seasonings and cook, stirring constantly over low heat until they start to thicken - do not let them solidify.
Step 4
Make sure all toppings are relatively dry.
Step 5
Layer eggs and toppings in a buttered pie pan.
Step 6
Bake at 350*F until outer 2/3rds looks solid, 15-20ish minutes.
Step 7
Cover with shredded cheese and allow to set for 10-15 minutes.
