Instructions
Step 1
If using live lobsters, place in the freezer or ice to put them to “sleep”. Remove the head and save the lobter butter aka tomalley. (Optional - can be consumed in moderation) In a bowl, add tomalley, oyster sauce and crab paste. Mix and set aside for later.
Step 2
Cut the lobster into sections and crack the claws so that the sauce gets in between for more flavor.
Step 3
In a large pan, heat up oil. Coat the lobster in egg then dust with flour. Flash fry the lobster in batches for 30 seconds and remove. Using a clean pan, add 2 tbsp oil and minced garlic and ginger, then cook until fragrant. Add lobster and tomalley then let this cook for 2-3 minutes. Add jalapeños, onion, basil, and green onions. Season with a little salt and pepper. Toss everything together then cover and cook for another 2 minutes.
