Pesto Chicken and Broccoli Bake

Instructions

Step 1
Preheat oven to 350.
Step 2
Boil a pot of salted water. Add noodles and cook until noodles are soft. Drain and set aside.
Step 3
In a large skillet, warm up 1 tbsp of the oil from the sundried tomatoes. Add chicken to the skillet once oil is warmed. Season with salt, pepper, garlic powder and cook until chicken is no longer pink. Remove chicken from skillet and set aside.
Step 4
In the same skillet, melt butter. Add onion and saute until translucent. Add minced garlic to the skillet and cook until fragrant.
Step 5
Pour in heavy cream and let simmer for a few minutes.
Step 6
Add in 1 cup of mozzarella cheese and 1 cup of parmesan cheese. Reduce heat and stir until cheese is melted.
Step 7
Add in sun dried tomatoes, broccoli, spinach, and pesto. Add in additional seasonings and stir until everything is combined.
Step 8
Move to an oven safe dish and top with remaining mozzarella and parmesan cheese.
Step 9
Bake in the oven for 15 minutes.
