The BEST Crunchy Beef Roast potatoes - Tis the season! These delicious Crunchy Roast Potatoes are a regular recipe at our house. These are the BEST roasties flavoured with beef stock and beef dripping/tallow. They are crispy on the outside with a perfectly creamy fluffy interior. No Roast Dinner is complete without Roasties!

Instructions
Step 1
Preheat the oven to 220C/GM 7 /425F.
Step 2
Peel and chop the potatoes into medium pieces (2 inches across).
Step 3
Place in a deep pot and cover with Boiling Water/Beef Stock. Bring back to the boil and then simmer for 4 - 5 minutes until the edges look tender.
Step 4
Add dripping to a large roasting tin. Place in the oven until hot - 10 - 15 minutes.
Step 5
Drain the potatoes in a colander. Add them back to the pot, cover with a lid and shake to rough up the edges.
Step 6
Leave to steam dry for 5 - 10 minutes.
Step 7
Carefully pop the potatoes into the hot beef fat in the oven. Turn the Potatoes to make sure they are completely coated in fat.
Step 8
Cook for 40 - 55 minutes, turning once midway.
Step 9
Serve with a sprinkling of flaky sea salt.
