Instructions

Step 1
Instructions
Step 2
Prepare the Topping
Step 3
Preheat the Oven: Preheat your oven to 350°F (175°C).
Step 4
Make the Caramel Topping: In a 9-inch round cake pan, melt the butter over medium heat. Once melted, remove from heat and stir in the brown sugar, spreading it evenly across the bottom of the pan.
Step 5
Arrange Pineapple and Cherries: Arrange the pineapple slices on top of the caramel mixture. Place a maraschino cherry in the center of each pineapple slice and in the spaces between.
Step 6
Make the Cake Batter
Step 7
Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
Step 8
Cream Butter and Sugar: In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes.
Step 9
Add Eggs and Vanilla: Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
Step 10
Alternate Flour and Milk: Gradually add the flour mixture to the butter mixture in three parts, alternating with the milk, beginning and ending with the flour mixture. Mix until just combined.
Step 11
Assemble and Bake
Step 12
Pour the Batter: Carefully pour the cake batter over the pineapple slices in the prepared pan, spreading it evenly with a spatula.
Step 13
Bake: Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
Step 14
Cool and Invert: Let the cake cool in the pan on a wire rack for 10 minutes. Run a knife around the edges of the pan to loosen the cake, then place a serving plate on top of the pan and invert the cake onto the plate. Let it sit for a few minutes before lifting off the pan.
