Step 2
1. Prepare the Dough:
Step 3
In a small bowl, mix the warm water, sugar, and yeast. Let it sit for about 5-10 minutes until frothy.
Step 4
In a large mixing bowl, combine flour and salt. Add the yeast mixture, warm milk, and olive oil.
Step 5
Mix the dough until it comes together, then knead on a floured surface for about 10 minutes until the dough is smooth and elastic.
Step 6
Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1-2 hours, or until doubled in size.
Step 7
2. Prepare the Filling:
Step 8
Heat 1 tablespoon of olive oil in a large skillet over medium heat.
Step 9
Add the chopped onion and garlic, and sauté until softened and golden.
Step 10
Add the ground beef and cook, breaking it up with a spoon until browned.
Step 11
Stir in the cumin, cinnamon, allspice, salt, and pepper. Cook for a few more minutes until the spices are well combined.
Step 12
Add the chopped parsley, pine nuts (if using), and lemon juice. Mix well and remove from heat. Allow the filling to cool slightly.
Step 13
3. Assemble the Meat Pies:
Step 14
Preheat your oven to 375°F (190°C).
Step 15
Punch down the dough and divide it into 10-12 equal portions. Roll each portion into a ball.

Step 17
Place a spoonful of the meat filling in the center of each dough circle.
Step 18
