Sweet & Sour Pork Noodles

This is another “fakeaway” recipe which cuts out the unnecessary sugar, fats, additives and ultra-processed ingredients that a takeaway typically offers. High in protein and with an energy density of slightly more than 1 calorie per gram this meal is very filling but also tastes great! Pork can be replaced by any other lean meat or fried tofu can be used as a vegan alternative. To simply the recipe use a purchased sweet and sour sauce.

Instructions

Step 1
Stir the pineapple juice, passata, vinegar, soy sauce, sugar, tomato sauce, ginger and a pinch of salt in a bowl. Remove any fat from the pork, then chop it into small pieces and add it to the marinade. Leave for 30 minutes. Cook the noodles in line with the cooking instructions. Finely chop the garlic and chilli and slice the spring onions lengthways. Fry the marinated pork in a tablespoon of olive oil in a frying pan for around 5 minutes then add the garlic, chilli and onions. Add half a tablespoon of cornflour to the marinade and mix in so there are no lumps. Pour this marinade over the pork then add the beansprouts, pineapple and noodles to the pan. Season with some salt and cook for a further 5 to 10 minutes until the sauce has infused into the other ingredients. Suggested servings: Two or three portions.
