Instructions

Step 1
Slice beef tenderloin thinly and transfer sliced beef in a bowl. Marinate beef slices with egg white, chicken powder and potato starch. Coat with a thin layer of sesame oil if needed.
Step 2
Prepare and dice some garlic for final garnish and slice additional garlic, ginger, cilantro and scallion (both chunks and small pieces). Wash bean sprouts and slice some cabbage.
Step 3
Heat up cooking oil in a skillet, fry some dried chili and Sichuan peppercorns on low heat, and remove them from heat once they become crispy and radiant. Dice them finely for dish garnish.
Step 4
Fry bean sprouts and cabbage with remaining cooking oil in the skillet, remove them from the heat once they are slightly cooked, place them at the bottom of a bowl.
Step 5
Heat up some cooking oil in a pot, simply put in sliced ginger, garlic, Sichuan Pi Xian bean paste on medium heat for a minute or so until you smell the aroma. Then pour water in the pot to mix and bring it to boil.
Step 6
Once the broth starts to boil, simply season the broth with soy sauce and chicken powder. Simply shut off the heat before we add sliced beef in the broth. Place sliced beef one at a time in the broth to cook on medium heat again. You may simply stir the beef from side to side, try not to disturb the shape of the beef.
Step 7
Simply transfer cooked beef from the pot and place them on top of vegetables in the blow. Add small amount of potato starch in the broth to cook until it becomes thick, pour appropriate amount of broth in the beef bowl.
Step 8
Place diced garlic, chopped chili, Szechuan peppercorn and green onion topping over the beef. Pour hot oil over the dish. Garnish with sliced cilantro, scallion and sesame.
