Step 1
Preheat the oven to 200°C

Step 2
Thinly slice the spring onions

Step 3
Grate the cheese

Step 4
Melt the butter


Step 5
Grease muffin tray with butter


Step 6
Put the spinach in a colander in the sink and pour a kettle full of boiling water over it until it's all wilted. Rinse through with cold water then squeeze out as much as possible. Pat dry with kitchen paper and roughly chop


Step 7
Beat the eggs in a large bowl then add the milk and melted butter and combine.





Step 8
Add the flour, cheese, spring onion and spinach to the bowl. Mix together





Step 9
Pour the mixture into the muffin cases and cook for 15-20 mins. When cooked, a knife or skewer should come out clean
