Instructions

Step 1
1. In a bowl, combine the active bubbly starter and warm filtered water. Mix well using a bread whisk or fork until the starter is evenly distributed and the mixture has a milky consistency.

2. Add the unbleached flour and salt to the bowl. Mix using your hands until a shaggy dough forms and there are no dry pockets of flour left. The dough will be dry and sticky.

3. Scrape down the sides of the bowl and cover it with a damp kitchen towel. Let the dough rest at room temperature for 1 hour, or longer if needed.
Step 4
4. After 1 hour, perform a set of stretch and folds. Wet your hands and pull a quarter of the dough up until it starts to resist, then fold it over into the middle. Repeat this process four times around the bowl. Cover the bowl again and let the dough rest at room temperature for 3 to 4 hours, or until doubled in size.
Step 5
5. Flour your work surface and dump the dough out. Cut the dough into 4 equal pieces for individual pizzas or 2 pieces for larger pizzas. Shape each piece into a ball by pulling the corners into the middle and shaping it into a round ball. Let the dough balls rest for 20 minutes.

6. Preheat your oven to 450°F (232°C) with a baking sheet or pizza stone inside.
Step 7
7. If using a regular oven, shape each dough ball on parchment paper. If using a pizza oven, shape the dough directly on a floured surface.
Step 8
8. Stretch out the dough using your fingers until it forms an 8-inch disk. Alternatively, use a rolling pin if needed.
Step 9
9. Spread pizza sauce on the dough and add your desired toppings.
Step 10
10. Transfer the pizza to the preheated baking sheet or pizza stone using parchment paper (if baking in a regular oven).
Step 11
11. Bake the pizza at 450°F (232°C) for 10 to 12 minutes, or until the crust is golden brown and the toppings are cooked to your liking.
Step 12
12. Remove the pizza from the oven, slice, and serve hot. Enjoy your delicious same-day sourdough pizza!
