Step 1
Add onion carrot and celery to a pan then sauté in some olive oil until softened

Add garlic and mix then add potatoes and cook another minute add the beans and stir to combine

Make a bouquet garni with sage rosemary thyme and bay leaf or you can use the ready made ones from the shop ( use dried herbs if that’s all you have access to) then pour in hot vegetable broth and season with salt and pepper to taste . Bring to a boil then lower the heat and cover and simmer for 20 minutes .

Once cooked take the lid off then mash some
Of the potatoes to make the stew thick and creamy . Add parsley on top then serve . Any leftovers freeze in freezer bags flat on a baking tray . Once frozen remove the baking tray and keep the bags flat to keep more space in your freezer . These can keep for 6 months frozen and you can heat up on the stove oven or in the microwave .
