Instructions
Step 1
Cut chicken into bite size pieces and marinate in salt pepper, 1 tbsp soy, 1 tbsp brown sugar, 1 tbsp peanut butter and 1 tbsp coconut milk for at least an hour
Step 2
Griddle chicken on both sides until charred. Set aside
Step 3
Add garlic paste to pan with spring onion and chilli and stir
Step 4
Add 1 tbsp soy, 1 tbsp brown sugar, 1 tbsp peanut butter, 2 tbsp curry powder, stir
Step 5
Add tin of coconut milk, stir & add chicken pieces. Let simmer for 20 mins
Step 6
Make rice & serve
