Ingredients

2 x 14.5 ouncescans petite diced tomatoes
drained
1 x 14.5 ouncescan reduced-sodium beef broth
1 x 8 ouncescan tomato sauce
1 tablespooncider vinegar
1 teaspoongarlic powder
1 teaspooncajun seasoning
½ teaspoonsalt
½ teaspoonpepper
1 headcabbage
medium, cut into 1-1/2-inch pieces
1.5 poundslean ground beef
1onion
medium, chopped
3garlic cloves
minced
cauliflower rice
Optional, Hot cooked
fresh parsley
chopped
Instructions
Step 1
Mix first 8 ingredients; set aside. Place cabbage in a 5- or 6-qt. slow cooker.
Step 2
In a large skillet, cook beef with onion and garlic over medium-high heat until no longer pink, 7-9 minutes; crumble meat; drain. Spoon over cabbage; top with tomato mixture.
Step 3
Cook, covered, on low until cabbage is tender and flavors are blended, 5-6 hours. If desired, serve with cooked cauliflower rice and sprinkle with parsley.
