Instructions

Step 1
Combine all of the filling ingredients in a food processor and blend until smooth and creamy. Transfer to a bowl with a lid and put in the refrigerator. You can make this an hour ahead.
Step 2
Preheat a small skillet (preferably with a non-stick surface) to medium heat. Have some cooking spray on hand.
Step 3
Combine the crepe ingredients and blend until smooth. Make the crepes by pouring some batter in the pan and swirl to coat. Cook till the batter isn't shiny anymore. You may need to lower the heat if they are getting too brown. Make all of the crepes and stack them on a plate.
Step 4
Starting with coolest crepes, place a heaping table spoon of filling in the middle of a crepe and fold the top over the filling, then the two sides and end by folding over the bottom. Place the blintzes in a 9-in by 13-in pan and cover with plastic wrap and keep in the refridgerator if you are not going to be heating them up right away.
Step 5
Heat a skillet over medium heat and add some butter to the pan and swirl it around to coat the pan. Place 3-4 blintzes in the pan and heat just till the bottom of the blintz is browned, then turn it over and brown the other side. Serve immediately with sour cream and jam.
