1. Sauté Aromatics: • Heat olive oil in a large skillet over medium heat. Add the diced onion and garlic, and sauté for 3-4 minutes until softened and fragrant. 2. Toast the Rice: • Add the rice to the skillet and stir continuously for about 2-3 minutes, allowing it to become lightly toasted and coated in the oil. 3. Add Spices and Tomatoes: • Stir in the ground cumin, smoked paprika, chili powder, and ground coriander. Cook for 1 minute until the spices are aromatic. • Add the diced tomatoes (with their juice) and mix well. 4. Simmer: • Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to low, cover, and simmer for 15-20 minutes (or until the rice is tender and liquid is absorbed), stirring occasionally. If using brown rice, simmer for 30-35 minutes. 5. Finish: • If adding peas or corn, stir them in during the last 5 minutes of cooking. Season with salt and pepper to taste. 6.
