The Birria Beef
Step 1
1. (Optional) Char all the veg for 2 minutes aside on the flame of a gas hob.
Step 2
2. Mix all the broth ingredients together.
Step 3
3. Season the beef on all sides and sear for 3 minutes per side on all sides to get some browning.
Step 4
4. Gently toast the Chillies for 4 minutes to release the flavour.
Step 5
5. Add the broth, veg and Chillies in with the beef. Simmer for 2-4 hours until the beef starts to fall apart.

6. Pull the beef out the liquid and shred it. Blend the broth with everything in it until smooth, and pour a ladle of it over the beef to rehydrate
The Rice

7. Fry the rice in oil and salt for 4 minutes to cook off the starch. Add the water and simmer for 10 minutes with the lid on, and leave the lid on for a further 10 minutes before using.
The Mini Burritos

8. Mix all the fillings together.
Step 9
9. Lay a tenth of the filling onto each wrap, fold the sides over, and roll into a mini burrito

10. Place these mini burritos seam side down into a pan on medium heat for 3/4 minutes to seal them shut.
The Chimichangitos

11. Heat the oil in a deep saucepan. This is ready when you throw a breadcrumb in and you can see it sizzle.

12. Whisk the eggs with the milk, and mix the flour with with spices. Dip each mini burrito into the flour and then the egg twice, and then into the panko crumbs, ensuring it is fully coated each time.

13. Once they are all coated, lower into the oil and fry for 5-6 minutes, rotating half way through.
Step 14
14. Serve up with your favourite dipping sauce!
