Instructions
Step 1
1. Bring two cups of water to a boil and cook quinoa until soft. Once cooked, let cool for 10 minutes or store in the refrigerator.

2. Add white cabbage, purple cabbage, shredded carrots, steamed edamame, and diced cucumber to bowl and toss until mixed thoroughly.
Step 3
3. In separate dish, mixed peanut butter, coconut aminos, and chili oil throughly. Add into vegetable mixture and add cooled quinoa.
Step 4
4. Toss until mixed throughly and top with sesame seeds and chopped green onions. Add rice vinegar for an extra tang or chili oil for spice.
