0.5zucchini
medium sized, spiralized
0.5carrot
large, spiralized
½ cuppurple cabbage
shredded
1 Tbspcilantro
chopped
1 Tbsproasted peanuts

Peanut Dressing
Instructions
Step 1
Cook quinoa according to package directions. Set aside to cool.
Step 2
Mix together dressing ingredients and add to a 1-pint mason jar.
Step 3
Add in the following order: chickpeas, cooled quinoa, carrot noodles, zucchini noodles, shredded cabbage, cilantro, optional roasted peanuts.
Step 4
Seal and store in the fridge for up to 4 days.
Step 5
To serve, shake everything out into a large bowl and enjoy cold.
