Smoky Red Lentil and Black Bean Bun

The thing I love most about this recipe is the Bloody Mary sauce which brings back memories of my wenties. It is also the perfect sauce to slather on this black bean burger which comes together in under thirty mins. The protein patties are charred on the outside, tender in the middle, and packed with bold, smoky favour. Moke them once, and they have a permanent place in your weekly recipe rotation.

Ingredients

For the Patties
2 clovesgarlic
medium, finely chopped
1onion
medium, finely hcopped
4 Tbspketchup
1 tsptomato paste
1 tspsriracha
1 tspsmoked paprika
3 leavesbasil
chopped
250gblack beans
can, drained
50gred lentils
1 tspmadras curry powder
1 tspcumin powder
¾ cupoatmeal
4 leaveslamb lettuce
4buns
pickled vegetables
salt
for seasoning
pepper
for seasoning
Bloody Mary Sauce
Instructions
Step 1
Preheat the oven at 180C . Wash and boil the red lentils and set aside to cool completely. Drain the black beans and mash together with the red lentils with a fork. Fry the garlic and onions with some oil and stir in the tomato paste. Add smoked paprika, cumin, madras curry, ketchup, sriracha, oatmeal, basil, seasoning and knead well with your hands. With wet hands, form 4 patties. Place them on a baking tray and brush them with a bit of oil. Bake them on both sides and then girill til hey get a golden colour and look crispy on the outside.
Step 2
To make the dressing, add all ingredients to a bowl and mix thoroughly to combine. Place in an airtight container and store in the fridge.
Step 3
Layer the buns with the patties and all the other ingredients.
