Instructions

Blanch the green beans:

Step 1
Bring a pot of salted water to a boil. Add green beans and cook for 2-3 minutes until bright green and tender-crisp. Drain and immediately plunge into ice water to stop the cooking process. Drain again.

Sauté the beans:

In a large pan, heat the olive oil over medium heat. Add garlic and sauté for 1 minute until fragrant.

Add the green beans to the pan and toss to coat in the oil. Sauté for 3-4 minutes, stirring frequently.
Step 4
Add lemon zest and lemon juice, then season with salt and pepper to taste. Continue to cook for 1-2 more minutes until heated through.

Garnish and serve:

Transfer the green beans to a serving plate and garnish with toasted almonds, if desired.
