Instructions
Step 1
Preheat the oven to 400 degrees.
Step 2
Cut spaghetti squash in half lengthwise.
Step 3
Coat both halves in olive oil.
Step 4
Add salt and pepper to taste.
Step 5
Place squash halves face down on a baking sheet.
Step 6
Bake for about 25 to 30 minutes.
Step 7
Brown the ground beef and season with oregano.
Step 8
After removing the baked spaghetti squash from the oven, lower the temperature to 350 degrees.
Step 9
Shred the baked squash and drain off any excess water.
Step 10
In a large bowl, mix together the squash, cooked ground beef, marinara sauce, and parmesan.
Step 11
Add the mixture back into the spaghetti squash shells.
Step 12
Top with sliced mozzarella and bake for 20 minutes at 350 degrees.
Step 13
Before serving, add fresh parsley or basil.
