Great for when you want something easy and quick. Makes great leftover too! We've even prepped this and frozen it for later when we need a quick meal. To reheat from frozen, preheat oven to 400° F and bake 45 minutes to and hour, until heated through.

Instructions
Step 1
Preheat oven to 400° F.

Step 2
In a medium bowl, add cornbread mix, sour cream, corn, and egg. Mix until evenly combined. Spray 9" glass pie pan or 8" x 8" glass baking dish with nonstick spray, add cornbread base, and bake at 400° F for 15 minutes, or until golden. Let cool slightly.








Step 3
While cornbread base is baking, add olive oil to a large skillet over medium heat. Brown ground beef. Add onions and cook until tender, about 5 minutes. Add garlic and cook 1 minute more. Add taco seasoning and salt.








Step 4
Once meat, onion, and garlic are cooked, add 1/2 cup enchilada sauce and stir until combined.


Step 5
Once cornbread base is slightly cooled, poke holes with bottom of a wooden spoon. Pour remaining 1/4 cup enchilada sauce on top. Top with beef mixture.



Step 6
Top with cheese and bake 20 minutes more. Let sit for 10 minutes before serving.
